Mixed Results

When it comes to food, as most of you know by now, I’m pretty much up for everything. I love to try new things (that are not moving!) Jackie is so good at changing our meals and experimenting with new recipes, while keeping to old “goodies” (Steve – insert some here). The other night we were enjoying dinner, when I looked at her and said, “I wonder who came up with mixed vegetables.” She stared at me when I said, “How did they make it in the bag, and why did they mix these veggies together?” Of course she rolled her eyes, started laughing, saying, “Only you can think of this stuff.” Of course, the thoughts stuck with me, and I kept asking myself and Jackie, “Who put these veggies together … do certain veggies mix better than others, or are these little gems just the ‘mistakes’ that didn’t make it? Kind of like second string – minor leagues – NBA G league et.? – Were they just the leftovers swept up from the floor of the factory …EEEUUUGGHH!) and does the corn really like touching the peas? How does the packaging line combine them?” 

So, of course, I went down the “rabbit hole” to learn more and was pleased with the vast amount of history and info. Surprisingly, mixed vegetables have a rich backstory (who knew?) from early preservation experiments to today’s multibillion-dollar frozen aisle staple. Enjoy! Mixing an assortment of vegetables in one dish has been around for thousands of years.  Across cultures, people learned that combining greens, roots, and legumes was smart and savory. Mixed vegetable dishes show up everywhere humans cooked with scarcity, seasonality, and common sense.

In Southeast Asia, mixed vegetables appear early and often. In Java, Indonesia, pecel – lightly blanched greens like cassava leaves, long beans, and bean sprouts tossed in peanut sauce – appears in 9th-century inscriptions, making it one of the oldest documented mixed vegetable dishes. Its cousin gado gado (“mix-mix”) added tofu, eggs, and rice cake.

In China, stir-frying encourages vegetables to mingle. Cooking quickly over high heat meant combining small, evenly cut pieces – bamboo shoots, mushrooms, leafy greens, and later tofu or pork – into fast, balanced dishes. Texture, color, and timing mattered, ideas that still shape today’s frozen stir-fry blends. 

The Indian subcontinent produced perhaps the widest variety of mixed vegetable traditions. Countless regional sabzi dishes evolved based on climate and crops, from coconut-based avial in Kerala to slow-cooked undhiyu in Gujarat. These weren’t fixed recipes so much as cooking frameworks – combine whatever roots, gourds, beans, and greens were in season and have at it.

In Persian, Central Asian, and Korean cuisines, mixed vegetables also played a starring role. Herb-heavy platters like sabzi khordan and stews such as ghormeh sabzi combined multiple greens and legumes into one dish. In Korea, assorted seasoned vegetable side dishes (namul) eventually inspired bibimbap, where rice, vegetables, egg, and meat are mixed together at the table.

Europe followed the same path. Ancient Greek and Roman salads mixed assorted greens with oil and salt – the word salad itself coming from the Latin herba salata, meaning “salted greens.” (Now you know!) Medieval peasants relied on pottage, a long-simmered mix of grains, beans, and vegetables. 

In the Americas, Indigenous “Three Sisters” agriculture – corn, beans, and squash – formed the base of dishes like succotash, long before Europeans arrived. Across Latin America, hearty stews blended Old World meats with New World vegetables to feed many mouths from one pot.

The frozen food breakthrough – What turned mixed vegetables into a freezer staple was one man: Clarence Birdseye. In the early 1900s, while working in Labrador, Canada, Birdseye noticed Inuit communities rapidly freezing fish and vegetables outdoors. The quick freeze preserved flavor and texture far better than slower freezing. Back in the U.S., he engineered a system that froze food quickly between super-cold metal plates, minimizing food cell damage, and created fresh-to-frozen food as we know it today.

By 1930, he was test-marketing a line of 26 frozen products, including peas and spinach, in Springfield, Massachusetts, a step that helped establish commercial frozen vegetables as a new category (we still buy frozen spinach in a box). Through the 1940s and 1950s, companies began contracting farmers to grow vegetables specifically for freezing, harvesting them at peak ripeness, blanching them, and freezing them quickly. 

Why these vegetables ended up together – Mixed vegetables aren’t random (I knew it!!) They’re chosen for three practical reasons.

  • They freeze well. Peas, carrots, corn, and green beans hold color and texture better than many vegetables, which is why they dominate classic blends. Others, like broccoli, are more finicky and usually appear in specialized mixes.
  • They cook at similar speeds. Vegetables are cut and sized so they blanch and reheat evenly. Dicing carrots small enough to keep pace with peas is simple food engineering – and kind of genius.
  • They appeal to almost everyone. These simple vegetables are affordable to grow, widely liked by kids and adults, and work in soups, casseroles, stir-fries, pot pies, and fried rice. In the U.S., the USDA defines what qualifies as “frozen mixed vegetables” and suggests proportion guidelines so one ingredient doesn’t dominate. A common food-service mix looks roughly like this by weight: 30% carrots, 20% peas, 20% corn, 30% green beans. That’s why your spoonful usually feels balanced instead of carrot-heavy. 

Mixing lines use calibrated feeders to hit those ratios, and finished products are graded (A, B, or C) based on color, texture, flavor, and distribution. (Yes—there are grades. I knew it too!). Grade A mixed veg must have bright, typical color, tender texture, and a good distribution of each vegetable; a bag full of broken, pale peas and soggy beans isn’t making the cut!

Big market, small pieces – Today, frozen mixed vegetables are harvested mechanically, washed, cut, blanched, and quick-frozen using systems based on Birdseye’s original ideas.

Economically, the global frozen vegetables market is worth tens of billions of dollars; one recent analysis pegs it around $53–$57 billion US dollars in the mid-2020s, with steady growth expected into the 2030s as convenience foods stay popular – well beyond just vegetables.

Why mixed vegetables endure – Single-vegetable bags still matter for cooks who want precision or who have strong opinions about lima beans. Mixed vegetables sit in the middle: flexible, simple, and ready for just about anything. Your “simple” bag is actually the product of rules, ratios, and quality checks that quietly shape what ends up on your dinner table. So, the next time you tear open a bag of mixed vegetables, you’re not just skipping the chopping. You’re tapping into centuries of cooking tradition, a clever freezing breakthrough, and a carefully engineered balance of vegetables that freeze well, cook together nicely, corn and peas included, whether they like it or not.
